OK, I’m going to share with you the quickest recipe ever right now, and it’s a game changer if you’re looking to eat less meat!
This recipe successfully fooled both my small humans…They had no idea they were eating Vegetarian Lasagne (aside from them noticing some lentils…but that didn’t stop them tucking in).
This ‘Mock Mince’ recipe can be used in exactly the same way as regular meat mince, the only difference being it is not at thick a mixture once you’ve turned it into a bolognese or chilli…but you can pad it out with more veg if you feel like it’s needs more ‘meat’.
200g Organic Closed Cup Mushrooms (or any mushrooms of your choice)
3 Garlic Cloves
100g Cooked Lentils
Salt and pepper to taste
Dice the Onion and fry in a little coconut oil or oil of your choice over a medium heat.
In a food processor, whizz the Mushrooms and Garlic until you get a finely diced ‘mince like’ mulch of a mixture.
Add the Mushroom mix to the Onion along with the Lentils and cook over a low heat for a few minutes.
Season well with salt and pepper, and that’s it!
Continue as you would usually with your favourite bolognese, chilli, or other mince recipe.
I added Italian herbs, Chopped Tomatoes, Tomato Puree, and Vegetable Stock. I made a cheese sauce with flour, butter, milk, and cheddar cheese, and I used my Gluten free Pasta recipe for the Lasagne sheets.
As I said, the boys questioned the Lentils, but they ate the lot before I told them it was meat free 😁
